Slice the Bell Pepper, slice the Spring Onion, chop the Coriander and half the lime.

Put the Egg Noodle into the boiling water. Cook for about 5 minutes or until tender. Once done, drain them and put them to one side.

Heat a large frying pan with a little oil. Add the Pork Mince, sprinkle over the Thai Spices and fry for 5 minutes. Break up the Pork Mince as it cooks. Once done drain any fat from the pan and return to the heat.

Put the Bell Pepper into the pan and cook for a further few minutes. Add the Spring Onion and mix in the Rice Vinegar, Honey, Ketjap Manis, half the Coriander, a squeeze of Lime and season with a little salt and pepper. Mix together well.

Add the Egg Noodle into the pan and mix together until nicely coated. Cook for a further couple of minutes.

Share the pork noodles out evenly into your bowl or plates and chuck on a little of the Coriander that's left. Eat and enjoy!
